In 1994 I made an important move to join the impressive Heston Blumenthal at the Fat Duck in Berkshire.
I wanted to get closely involved in a progressive approach where I could make a difference – not just maintain a standard.
Together we worked hard to build a team of dedicated taste professionals and the restaurant gained 3 Michelin stars. In 2005 it was voted best restaurant in the world.
