In 2004 I had the chance to run my own show at the Riverside Brasserie in Berkshire - and I love it. I can make decisions to develop the place - such as our champagne bar and even a bar for boat owners. Being Head Chef and owning your own restaurant is a whole new challenge but the rewards are many.
